Foundations of Cooking in Clay

Please join us at Long Table Farm for a special class on cooking in clay. Clay pot cooking has been a staple of culinary traditions worldwide and remains an irreplaceable element of dishes in many cuisines. In this class, Orion Langdon of Hand to Mountain will teach three foundational cooking techniques that can be applied to a wide variety of recipes and used with many kinds of cookware. We will use a bean pot to cook beans, and clay casseroles to make a pilaf and also braise a roast in Long Table Farm’s wood-fired oven. Orion will also give a micaceous clay pottery demo, sharing with students the techniques for making this beautiful and durable type of clay cookware!

More Information

Class will be held outside on our farm and in our open, outdoor kitchen. Students will participate in making the meal and all will enjoy a delicious meal together at the end of class! If you are attending with other people who have bought tickets seperately and you would like to sit with them, please indicate in the notes of your order.

About the Instructor

Orion Langdon

Orion Langdon has been working with his hands all his life. He has spent time as a lobsterman, shepherd, cook, filmmaker, artist and writer. Under the guidance of renowned master potter Felipe Ortega, he discovered a deep love and respect for micaceous clay. Orion makes hand coiled cooking vessels and cups from micaceous clay harvested in the wild, generous mountains of northern New Mexico. Orion‘s work is one of many iterations of the ever evolving, centuries old tradition of pottery making in this region. He strives to make work whose beauty does justice to her wild mountain origins and brings sustenance and vitality to people’s homes. Cancellation Policy- Any cancellation up to two weeks prior to your event date will be refunded 100%. No refunds or credits will be issued for cancellations received less than 2 weeks before your event start date, however, you may always send a friend in your place if you’re unable to attend. If a class needs to be canceled due to a natural disaster, public health crisis, or other act of nature that will prevent the class from being safely completed, then the attendee that made the booking is eligible to collect a full refund or credit for a future class at Long Table Farm.
