Learn the timeless art of preserving the harvest through water bath canning while celebrating the abundance of the Pacific Northwest. In this hands-on workshop, we’ll explore the foundations of safe home canning, how acidity creates shelf-stable pickles, and the science behind crisp, flavorful preserves.

Together we’ll prepare three distinctive pickle recipes inspired by food traditions from around the world, each highlighting seasonal vegetables at their peak. Along the way, we’ll discuss selecting produce, choosing spices, preparing jars, and building confidence in safe home preservation.

Midway through the day, we’ll gather around the table for a shared Soil to Skillet lunch prepared by the Willamette Farm & Food Coalition’s culinary team using the freshest ingredients available from the farm stand. Vegan and gluten-free options will be available.

Participants will leave with:

  • Hands-on experience using the water bath canning method
  • A solid understanding of safe home canning practices
  • Three jars of handmade pickles
  • Recipes and resources to continue preserving at home
  • New connections with fellow food lovers and growers

Whether you’re preserving your first cucumber or looking to deepen your skills, this workshop offers a welcoming space to slow down, learn together, and celebrate the harvest.

Cancellation Policy- Any cancellation up to two weeks prior to your event date will be refunded 100%. No refunds or credits will be issued for cancellations received less than 2 weeks before your event start date, however, you may always send a friend in your place if you’re unable to attend. If a class needs to be canceled due to a natural disaster, public health crisis, or other act of nature that will prevent the class from being safely completed, then the attendee that made the booking is eligible to collect a full refund or credit for a future class at Long Table Farm.
