The Basics of Whole Grain Sourdough

An introduction to whole grains and baking naturally leavened breads at home! This class is a lecture/observation based class, with a few chances to get your hands doughy. Naturally leavened breads are most commonly known as ‘sourdough’. Enjoy learning about this ‘old world’ method of leavening breads without the use of commercial or instant yeast. The long fermentation of naturally leavened breads gives the wild yeast, in the starter/sourdough culture, a chance to break down the complex proteins of wheat. This makes it easier for our bodies to digest while also preserving all the good stuff!!

We will be providing a bountiful lunch at the end of class featuring local products to enjoy with the bread baked in the class. Students will return home with recipes and their own Sourdough Starter (‘the Mother’)!

Class Details

Class will be held outside on our farm and in our open outdoor kitchen. Masks will be required for this event and necessary precautions will be in place to ensure appropriate social distancing.  Please indicate in the notes of your order if you will be taking this class with a friend or family member who you can share a table with.

About the Instructor

Ryan Moore

Ryan Moore is a baker of naturally leavened products and has been in the world of fermentation for over 14 years. With experience ranging from a small bread start-up in a restaurant kitchen, to the high volume production of a large Seattle bakery, to 30 loaf bakes in a wood fired oven, and loads of home baking. Upon moving to Oregon, Ryan has become enthralled with the world of whole grain and the endless flavors and possibilities. With many years of teaching bakers and serious home bakers alike, Ryan is looking forward to starting you on your own bread journey and eating Moore Bread!

Cancellation Policy

Any cancellation up to two weeks prior to your event date will be refunded 100%. Cancellations up to 5 days before your event date will qualify for an online credit to be applied to another class, demo or product. No refunds or credits will be issued for cancellations received less than 5 days before your event start date, however, you may always send a friend in your place if you’re unable to attend. If a class needs to be canceled due to a natural disaster, public health crisis, or other act of nature that will prevent the class from being safely completed, then the attendee that made the booking is eligible to collect a full refund or credit for a future class at Long Table Farm.
